Overview

Our client is seeking a talented and motivated Sous Chef to join their boutique hotel on the beautiful Isle of Islay in Scotland. This is an exciting opportunity for a culinary professional with a genuine passion for seasonal cooking, local produce, and sustainability.

The hotel is situated on a private estate that produces its own high-quality grass-fed beef and lamb, a variety of wild game, and fresh vegetables from a well-maintained kitchen garden. The nearby coastline also offers some of the best seafood in Scotland, including lobster, crab, langoustines, oysters, and scallops.

This is a unique chance to play a key role in a vibrant field-to-fork kitchen, working with exceptional ingredients and contributing to the creative direction of the menu.

Job duties
Responsibilities of the Sous Chef in Isle of Islay include:

  • Supporting and working closely with the Head Chef to deliver consistently high-quality dishes
  • Leading the kitchen in the Head Chef’s absence
  • Contributing ideas for menus and seasonal recipes
  • Preparing and cooking meat, fish, game, and vegetarian dishes to a high standard
  • Overseeing food preparation and ensuring quality and portion control
  • Supervising, training, and motivating junior members of the kitchen team
  • Maintaining high standards of hygiene, food safety, and kitchen cleanliness
  • Assisting in stock control and ordering
  • Ensuring compliance with health and safety regulations

Candidates must have/be:

  • Minimum of one year’s experience in a Sous Chef or strong Chef de Partie position
  • Passion for fresh, local produce and creative cooking
  • Strong leadership and communication skills
  • Good working knowledge of food hygiene and safety practices
  • Experience working in a fast-paced, high-quality kitchen environment
  • Ability to train and inspire junior kitchen staff
  • Awareness of COSHH and manual handling practices
  • Comfortable using kitchen equipment and handling knives safely
  • A clean UK driving licence
  • Reliable, organised, and proactive with a positive attitude

Desirable qualifications:

  • Level 2 Health and Safety in the Workplace
  • Level 3 Food Safety

Accommodation

Shared accommodation in a large estate house (shared bathroom and kitchen).

£50 per week contribution towards electricity and council tax
