Our client is seeking a skilled and adaptable permanent Head Chef to lead their culinary team at a boutique hotel nestled on the picturesque Isle of Islay in Scotland.

This is a fantastic opportunity for a seasoned chef to showcase their talent in crafting delectable dishes using locally sourced, seasonal ingredients. The estate boasts high-quality grass-fed beef and lamb, an abundance of wild game, and a thriving kitchen garden. Islay’s rich coastal waters yield an array of seafood delicacies, including lobster, crab, langoustines, oysters, and scallops.

The role involves overseeing a dynamic field-to-fork operation, offering the successful candidate the chance to unleash their creativity with premium produce in a truly inspiring setting.

Job duties
Responsibilities of the Head Chef in Isle of Islay, Scotland include:

  • Leading the kitchen team in preparing, cooking, and presenting exceptional dishes
  • Collaborating with the Sous Chef to curate menus, develop recipes, and innovate dishes
  • Managing the preparation of meat, fish, and other ingredients
  • Ensuring compliance with health and safety regulations
  • Maintaining high standards of food hygiene
  • Supervising and mentoring junior kitchen staff
  • Monitoring portion sizes and minimising waste
  • Maintaining kitchen cleanliness and food safety standards

Candidates must have:

  • Minimum of one year of relevant experience as a Head Chef or Senior Sous Chef role
  • Proficiency in manual handling techniques
  • Familiarity with Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety protocols
  • Experience with kitchen equipment and utensils, including knives
  • Clear verbal and written communication skills in English
  • A valid driver’s licence
  • Demonstrated ability to lead a kitchen section
  • Capacity to work independently and oversee junior staff
  • Consistent track record of delivering high-quality cuisine across all sections
  • Strong communication and team management skills with meticulous attention to detail

Desirable qualifications include:

  • Level 2 Health and Safety in the Workplace Award

Separate accommodation is provided – £50 per week payable toward electricity and council tax.
